The new iMac with the M6 chip can be configured with a 2.5 Gigabit Ethernet port, which is built into the power adapter rather than the computer. The port is a $30 upgrade option for the lower-end iMac and comes standard with the higher-end model. For the previous model, the optional Ethernet port is limited to 1 Gigabit.

I did the same thing with my M4 Mini, don't see much of a chance that I will make use of the 10 GbE connectivity as opposed to 2.5 GbE. 2.5 works with the Cat5e cables in the walls of my house, doubtful that 10GbE will work.
2.5 Gbps Ethernet is a nice feature to have. I paid much more to upgrade my M4 Mac mini to 10 GigE, but I only need 2.5 Gbps for the foreseeable future.
